3 dishes you can easily cook on a campfire and campfire pan

Dinner on the campfire became really popular when covid came in 2020, and it seems like it's here to stay. It's very easy, and much of the preparation for dinner outdoors is done indoors before you go out. Dinner tastes so incredibly good outdoors!

Anine Gutubakken Byles makes "outdoor dinners" and recipes for the Norwegian Hunters and Fishermen's Association, and has taught me several great dishes, such as hot-smoked perch on birch, trout in foil and pizza rolls on a campfire. Food outdoors or on a trip doesn't have to be boring - it's definitely worth the little effort!

1. Folded tortilla

You need:

  • 3 lunch boxes
  • Frying pan
  • Tongs/spatula
  • Firewood
  • Lighter

Recipe for 4 people:

  • 4 tortilla lefsers
  • 400 gr ground elk
  • 0.5 pcs onion
  • 1 tsp salt/pepper
  • 1 tsp dried thyme
  • 150 gr mushrooms
  • 175 gr cherry tomatoes
  • 2 pk fresh mozzarella

Preparations indoors:

  1. Finely chop the onion. Heat a frying pan and fry the ground meat and onion together. Season with salt, pepper and thyme. Transfer to a lunch box.
  2. Cut the mushrooms and cherry tomatoes into pieces and transfer to a lunch box. Slice the mozzarella and wrap them in paper towels.

Pack everything to take outside. Don't forget the wood!

On the fire or fire pan:

  1. Make a cut in the tortillas from the middle down
  2. Place mozzarella slices on the triangle at the bottom left. Follow with minced meat on the triangle at the top left and sliced ​​mushrooms on the right. Finish with lettuce and cherry tomatoes at the bottom right.
  3. Wrap the tortillas together by folding the bottom triangle on the left over the top triangle on the left, then fold over to the right and down so that you have a triangular pocket.
  4. Place the filled tortilla on the fire and cook it until it is golden on both sides and the mozzarella has started to melt.

2. Banana split

It is not written in stone that you should only eat real food on a trip. Treat yourself to a good banana split the next time you are out! This is a very simple recipe that anyone can make, and it also tastes absolutely delicious.

You will need:

  • Aluminum foil
  • Pinch
  • Wood
  • Lighter

Recipe for 4 people:

  • 4 bananas
  • 1 bag of small marshmallows
  • 100 g chocolate chips
  • 150 g raspberries

Preparation indoors:

  1. Make a cut in the bananas lengthwise so that the shell opens. Use a fork and mash the bananas a little. Fill with marshmallows, chocolate chips and raspberries.
  2. Wrap the bananas in aluminum foil and seal the bag.

On the fire or campfire pan:

  1. Place the bananas on a fire grate, in a frying pan or on indirect heat – for example on a large stone close to the flames. Leave them for approx. 10 minutes, until the chocolate chips have started to melt.
  2. Unwrap them and serve.

3. Venison in foil

Recipe for 4 people:

  • 600 gr elk steak (or other game steak)
  • Salt/pepper
  • 2 tbsp butter
  • 1 pc red onion
  • 1 pc bell pepper
  • 4 pcs potatoes
  • 100 gr chanterelles

Herb butter:

  • 4 tbsp butter
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp dried basil
  • 2 tsp dried thyme

Preparations indoors:

  1. Cut the elk steak into small pieces and season with salt and pepper. Heat a frying pan with butter over medium-high heat and fry the elk meat until golden. Remove the elk meat and add the chanterelles to the frying pan. Fry them for a couple of minutes.
  2. Bring a pot of water to the boil and cook the potatoes until tender. Cut them into small pieces.
  3. Cut the red onion into slices and the bell pepper into medium-sized pieces.
  4. Mix together the butter, lemon juice, salt, pepper, basil and thyme. You can also use store-bought rue butter.

You can either prepare the game packages indoors, or bring the ingredients in lunch boxes. Either way, it can be good to add the herb sauce at the end.

On the fire or campfire pan:

  1. Heat up and place the foil packages in the pot. Leave them until everything is heated through and the butter is simmering. You can also heat the game in foil on the fire.
